Guacamole…the dip that doesn’t quit. This versatile dish can find itself appropriate in so many settings: serve with chips for an amazing side dish or app, serve with crudités for a healthier option, spread it on a sandwich or wrap, serve it with tacos, or stuffed in a burrito. You name it; guac can do it. There’s just something about that fatty avocado, fresh lime juice and cilantro, and spicy onion and garlic that makes for the perfect bite. Make it fresh and eat it right away—that’s when it’s best!
5 ripe avocados (cut in big chunks, keep the pits)
juice of 1 lime
1 small tomato, finely chopped
1/2 small red onion, finely chopped
2 cloves of garlic, grated
2 tbs chopped cilantro
Get together your mise en place.
**Tip: When cutting the tomatoes, only use the outside of the tomato. Quarter your tomato, and use your knife to scoop out all of the inside and juices of the tomato. Now, with only the skin, finely chop the tomatoes. This allows the flavor of the avocado to shine verses the tomato.
Put the avocados and lime in the bowl first. This will keep the avocados from browning. Add the rest of your ingredients, and mix until just combined. We like our guac chunky, with big pieces of avocado. Salt to taste.
Put the guacamole in your serving bowl and top with at least one avocado pit. The pit keeps the guacamole from browning as quickly.
